Strawberry Milkshake

Ingredients

1 cup strawberry             
2 cups boiled & chilled milk
2 tsp honey or sugar
1 Scoop strawberry ice cream (optional)

Method

Put strawberry it in the blender along with chilled milk,
honey and half scoop ice cream blend it.
Add reaming ice cream on the top and serve chilled.
For healthier version skip ice cream.

Mochai Masala

Ingredients

1 cup mochai
2 onions (chopped)
1 tomato (chopped)
1 bunch coriander leaves (chopped)
1 tbsp chopped ginger & garlic
1 tsp red chili powder
½ tsp masala powder
1 cardamom
A pinch turmeric powder
2 tbs oil
Salt to taste

Method

Pressure cook mochai with salt, turmeric powder for one whistle, and set aside.
Heat oil in a pan add ginger, garlic & cardamom.
Add half onion and tomato sauté for 2 minutes.
Add coriander, red chili powder, turmeric powder, salt and sauté.
Allow to cool, and grind to fine paste and set aside.

Heat oil in a pan add reaming onion sauté.
Add boiled mochai along with its water.
Add the above paste, mix well, cover and cook in low flame for 10 minutes.
Finally add masala powder mix well and switch off the gas.
Goes well with appam / dosa / poori / chapthi.






Papaya & carrot smoothie

Delicious papaya &  Carrot smoothie Loaded with Nutrients                    
Ingredients
1 bowl papaya
1 boiled carrot
2 spoons honey or sugar

Method

Blend all ingredients together and serve. 
Papayas contain high levels of antioxidants vitamin A, vitamin C, and vitamin E.  Rich in Fiber, antioxidants may reduce the risk of heart disease. Boosts immune system.                Carrots are rich in vitamin A, K, calcium helps to strengthen our bones.






Rajma Soup

Ingredients

50 gms rajma (soaked overnight)
1 carrot
1 tomato
1 tsp crushed ginger
1 tsp crushed garlic
½ tsp oil / butter
Pepper & salt as needed
Few spring onion for garnishing

Method

Pressure cook rajma, carrot and tomato with water for 3 whistle.
Grind to a coarse paste and keep aside.
Heat oil in a pan add ginger & garlic saute.
Add rajma paste, after it comes to boil switch off the gas.
Add pepper powder and salt mix well.
Garnish with spring onion.

Pumpkin & carrot soup

Ingredients

1 cup pumpkin
1 carrot
Few spring onion
2 spoons cooked rice
¼ tsp chopped garlic & green chili
1 tsp oil / butter
1 tsp corn flour
Salt to taste

Method

Pressure cook pumpkin and carrot  with ½ cup of water and salt for 1 whistle.
Grind them along with cooked rice and water in a blender keep aside.
Heat oil in a pan, add garlic & green chili sauté.
Add spring onion and saute, add ½ cup water allow to boil.
Mix corn flour with little water, add to above and cook for 2 minutes.
Add vegetable paste, after it comes to boil, switch off the gas.
Garnish with spring onions.
Ready to serve hot pumpkin & carrot soup

Bisibela Bath

Though this very lengthy and time taking process, it taste too good.

Ingredients

1 cup rice
¾ cup toor dhal
100 gms small onions (shallot)
2 drum sticks (boiled and pulp taken separately)
2 tbsp pea nuts
1 tsp each peas & chopped carrot (optional)
Tamarind a small gooseberry size ball (soaked in water and juice extracted)
3 tbsp gingelly oil
2 tbsp ghee
Few curry leaves
¼ tsp turmeric powder
A pinch jaggery (optional)
Salt to taste

For Masala powder - Ingredients & method

2 tbsp grated coconut
1 tbsp coriander seeds
5 red chilies
¼ tsp fenugreek
Asafetida a pinch
1 small piece cinnamon
2 or 3 cloves
Few curry leaves
1 tsp oil

Heat oil in a pan and all the above ingredients one by one finally add coconut fry till brown.
Make it as dry powder and set aside.

Method

Wash and soak rice & dhal for 5 minutes.
In a cooker add 1 spoon oil 5 cups of water.
Let the water boil well, add rice & dhal, vegetables and turmeric powder,
Peanuts, drum stick pulp and ½ spoon ghee.
Pressure cook this for 5 whistles and set aside.

In pan heat oil add onions fry till brown.
Add tamarind water to the above, cook till raw smell goes.
Add half of the masala powder, mix well and switch off the gas.
Add this to the above rice & dhal mix.
Add salt and ½ cup boiled water and mix well.
Again cook this in low flame for 5-8 minutes. Open the cooker after 15 minutes.
Now add left over masala powder, curry leaves, a pinch jaggery and oil mix well.
Serve hot with a spoon of  melted ghee or gingelly oil.
Goes well with potato chips.

Tips

If you use more tamarind the taste won’t be nice.
Adding oil first in the cooker, rice & dhal won’t stick in the bottom.
Use only small onions & drum stick, no need to add any other vegetables.
Adding a pinch of jaggery at the final will enhance the taste.





Sapota Milk Shake (Chikkoo)

Ingredients

6 Ripe Sapotas
2 scoops vanilla ice cream (optional)
2 tsp honey
2 cups boiled and chilled milk

Method

Remove the seeds and scoop out the flesh from sapota.
Put it in the blender along with chilled milk,
honey and one scoop ice cream blend it. 
Add reaming ice cream on the top and serve chilled.
For healthier version skip ice cream.

Sapota contains a high amount of Vitamin A, so good for eyes.
It is rich in glucose which provides instant energy to the body.

It helps in strengthening the bones.

Kiwi fruit juice

Ingredients

2 Kiwi fruits
2 tsp sugar (or honey) 
A Pinch of salt
1 cup of water
Few Ice cubes

Method

Wash and clean Kiwi fruit, cut them cross wise.
Scoop out the pulp with spoon.
In a blender, Add the scooped out kiwi pulp, sugar, salt and water.
Blend it until it forms a smooth pulp.
The seeds adds a great texture to the juice
Serve it by topping it with ice cubes.

Health benefits

The kiwi fruit is rich in vitamin C, vitamin E, potassium, dietary fiber and magnesium.
This fruit is loaded with antioxidants.




Mushroom Gravy

Ingredients

1 Cup Mushroom
1 cup mixed color capsicum
1 onion
1 tbsp spring onion
2 green chilies
1 tsp chili sauce
1 tbsp soya sauce
1 tbsp corn flour
1 tsp ginger & garlic paste
2 tsp oil
Salt to taste.

Method

Soak mushrooms in warm water with a spoon of vinegar for 10 minutes and drain the water.
Heat oil in a pan add onion and spring onion.
Add ginger & garlic paste and green chili saute.
Add capsicum and salt saute for 2 minutes.
Now add mushroom mix well and cook for 2 minutes.
Add corn flour with little water add to the above and cook well.
Now add soya sauce & chili sauce.
After one boil switch off the gas.
Garnish with spring onions.
Goes well with roti / naan / phulkas .

Sweet and Sour Noodle Soup

Ingredients

2 tbsp boiled noodles
1 tsp boiled green peas
1 tbsp grated carrot
1 tabs spring onion
1 tsp crushed garlic
1 tsp chilli sauce (or green chilli)
1 tsp tomato ketchup
2 tsp vinegar
2 tbsp soy sauce
A pinch sugar
1 tsp oil or butter
2 tbsp corn flour
Salt to taste

Method

Heat oil in a pan and add garlic, and spring onion and saute.
Add boiled carrot, peas and noodles mix gently and set aside vegetable & noodles mix.
Mix corn flour with little water, boil 2 cups of water and add corn flour mix.
Cook it till the consistency is thick, add vegetable and noodles mix to this.
Add vinegar, sugar, soya sauce, green chilli sauce, tomato ketchup and salt.
After it comes to a boil, switch off the gas.
Sweet and Sour Noodle Soup is ready to serve.






Ladies Finger Sabzi

Ingredients

¼ kg chopped ladies finger
2 chopped tomatoes
Few coriander & mint leaves
¼ tsp red chilli powder
1 tsp crushed ginger
1tsp crushed garlic
A pinch turmeric powder
2 tbsp oil
Salt to taste.

Method

Heat oil in a pan add ginger & garlic saute.
Add ladies finger, turmeric powder & cook in medium flame for 5 minutes.
Add tomatoes, red chilli powder and salt mix well.
Cook in low flame till everything cooked well.
Finally add coriander & mint leaves.
Ready to serve ladies finger sabzi.
Goes well with hot rice / phulkas.

Radish Salad

Ingredients

1 cup grated radish
2 tbsp grated coconut
½ cup chopped onion (preferable small)
1 tsp vinegar
½ lemon
1 chopped green chilli
Few coriander leaves
Salt to taste

Method

Toss radishes, onion with salt and vinegar, set aside  for 10 minutes.
Drain liquid from the above and transfer to another bowl.
Add coconut, coriander, chilli, salt and lemon juice mix well.

Health benefits

Radish is rich in folic acid, Vitamin C and B-complex.
Good for treating jaundice and urinary infection.





Spring onion chutney

Ingredients

1 Bunch spring onion
2 onions
1 tomato
2 tsp urad dhal
2 red chilies
1 green chili
Very little tamarind
1 tsp oil
Salt to taste

Method

Heat oil in a pan add urad dhal, red chilli & green chilii.
Powder it coarsely and set aside.
Fry onion, tomato and spring onions and add tamarind.
Grind to a coarse paste, add the above powder and salt mix well.
Ready to serve spring onion chutney.
Goes well with idly/ dosa.

Health benefits

Spring onion lowers the blood sugar level.
It is used as an appetizer as it helps digestion.
It has vitamin K and vitamin C and helps to maintain bone strength.

Paneer Butter Masala

Ingredients

250 gms paneer/cottage cheese
4 or 5 cashew (soaked in hot water)
½ cup tomato puree
½ cup boiled milk (or ¼ cup fresh cream)
2 chopped onions
1 tsp ginger & garlic paste
1 tsp red chilli powder
½ tsp masala powder
1 tsp kasuri methi
1 tsp oil & 2 tsp butter
Salt to taste

Method

Soak paneer cubes in warm water for 2 minutes, drain the water and set side.
Heat oil in a pan.
Add onions and sauté for 2 minutes.
Add ginger & garlic paste fry till raw smell goes.
Add soaked cashew nuts, grind to a smooth paste and set aside.

Heat 1 spoon butter in a pan add tomato puree and sauté.
Now add red chilli powder and salt sauté well.
Add onion paste mix well, add some water cook for 5 minutes.
Now add ½ cup milk and mix well, cook for 2 minutes.
Add the paneer cubes and cook them in the gravy for 2-3 minutes stir gently.
Finally add crushed kasuri methi, masala powder and butter mix well cook for one minute.
Paneer butter masala is ready to serve.

Green moong dhal sprouts

How to sprout green moong dhal.

Wash well and soak the moong dhal in water and cover it with a lid.
Soak the dhal overnight.
Drain the water completely.
Put it in an air tight container and rest it for two days.
After one day, you will see small sprouts.
After two days you will see beautiful growth in sprouts from the moong dhal.
These sprouted moong stay fresh in the fridge for 2 days.
