Tomato Chutney

Ingredients

½ kg tomatoes (chopped)
¼ tsp turmeric powder
½ tsp sugar
¼ tsp mustard
3 tbsp gingelly oil
1 tsp red chillie powder
Few curry leaves
Salt to taste


Method

Grind tomatoes and make puree.(with out adding any water)

Heat 2 tbsp of oil in the pan, add tomato puree.
Add turmeric powder, red chillie powder and cook for 5 minutes.
Add salt and sugar, cover with lid and cook.(stir in between)
Cook till it absorbs water completely.

Heat 1 tbsp of oil, add mustard when it starts spluttering
add curry leaves and add this to the above chutney.
Ready to serve tomato chutney.
Goes well with Idly / Dosa.

For best taste needs to be prepared and served fresh.

Tomato & Garlic chutney

Ingredients

4 Tomatoes chopped
2 tbsp chopped garlic
2 tbsp gram dhal
2 tbsp coconut
3 Red chillies
A pinch red chillie powder
2 tsp oil
¼ tsp mustard
Few curry leaves
Salt to taste

Method

Heat oil in a pan, add garlic saute for a minute.
Add gram dhal, red chillies roast well.
Add tomatoes, salt and cook for 5 minutes.
Add coconut , cook for a minute and switch off the gas.
Once it came to room temperature grind to a smooth paste.

Heat oil in a pan, add mustard, when it starts
spluttering, add curry leaves and red chillie powder.
Add this to the above chutney.
Goes well with Idli / dosa/ Aapam

Peerkangai Thogayal (Ridge Gourd)

Ingedients

¼ kg Peerkangai (Ridge Gourd)
3 tbsp urad dhal
3 Red chillies
A pinch asafetida
2 spoons oil
Marble size tamarind
salt to taste

Method

Peel the outer skin of peerkangai slightly and cut into pieces.
Soak tamarind in warm water for 5 minutes.

Heat oil in a pan, add urad dhal roast them until brown in color.
Add red chillies, asafetida and saute for a minute and allow to cool.
Grind it to coarse powder and set aside.

In the same pan add oil, peerkangai, tamarind and salt saute for 3 minutes.
Grind it to coarse paste.

Now add the above powder with this paste and mix well.
Ready to serve Peerkangai thogayal.
Goes well with hot rice.

Ridge gourd is low in cholesterol, high in dietary fiber,

Coconut Chutney

Ingredients

1 cup grated fresh coconut
2 green chillies
Small piece of ginger (optional)
1 tbsp roasted gram dhal
¼ tsp  mustard
A pinch asafoetida
1 tsp oil
Few coriander or curry leaves
Salt to taste

Method

Add coconut, green chillies, ginger, roasted gram
dhal and salt in a mixie with a little water and make a fine paste.
Heat oil, add mustard and asafoeitida.
Add this to the chutney.
Garnish with coriander leaves.
Very simple and common coconut chutney is ready to serve.

Amla and Coriander Chutney

Ingredients

15 to 20 big amlas
2 bunches coriander leaves
8 or 9 chopped green chillies
¼ tsp turmeric powder
salt to taste
4 tbsp gingelly oil

Method

Boil amla with water, turmeric powder and remove seeds.
Wash and clean the coriander leaves and roughly chop them.
Heat 1 tbsp of oil in a pan.
Add amla and green chillies saute for 3  minutes.
Add coriander leaves saute for 3 more minutes.
Once it came to room temperature grind it to a paste. (without water)

Heat remaining oil in a pan add the above paste and salt.
Cook for 2 more minutes and switch off the gas.
You can store this in an air tight container more then a month.
Goes well with hot rice / Idly / dosa.
Tip : Same method you can do with mint leaves also.

Spring onion chutney

Ingredients

1 Bunch spring onion
2 onions
1 tomato
2 tsp urad dhal
2 red chilies
1 green chili
Very little tamarind
1 tsp oil
Salt to taste

Method

Heat oil in a pan add urad dhal, red chilli & green chilii.
Powder it coarsely and set aside.
Fry onion, tomato and spring onions and add tamarind.
Grind to a coarse paste, add the above powder and salt mix well.
Ready to serve spring onion chutney.
Goes well with idly/ dosa.

Health benefits

Spring onion lowers the blood sugar level.
It is used as an appetizer as it helps digestion.
It has vitamin K and vitamin C and helps to maintain bone strength.
