Paneer & Potato Paratha

Paneer & Potato Paratha

Ingredients & Method for dough

1 Cup wheat flour
water as needed
salt to taste
2 spoons oil

Method for dough

In a bowl take wheat flour, salt and mix well.
Make a soft dough by adding water, little by little.
Knead it well, cover it and set aside.

Ingredients for stuffing

3 tbsp mashed paneer
2 boiled  and mashed potatoes
1 onion (chopped)
1 tsp ginger & garlic paste
¼ tsp red chillie powder
¼ tsp masala powder
1 tbsp roasted gram dhal powder
Salt to taste

Method


In a bowl add all the above ingredients one by one and mix well.
Make small balls and set aside, stuffing is ready.

Method for parathas


Make equal sized balls out of the dough.
Roll it out into circle, place stuffing in the center,
and close it from all sides.
Now dust wheat flour and roll it out gently with the stuffing.

Heat a pan and place the rolled out paratha on it.
Cook well in low flame, then apply oil on the top,
flip it over to the other side.
Apply oil on the other side also and cook both sides well.
Ready to serve Paneer & Potato Paratha.

Broccoli & Green Peas Paratha

Ingredients & Method for dough

1 Cup wheat flour
4 tbsp milk
2 tsp oil
water as needed
salt to taste

Method for dough

Add warm water, milk, salt ,oil to wheat flour and knead in to soft
dough and set aside.

Ingredients for stuffing

1 Small broccoli (grated)
1 cup green peas (boiled and mashed)
¼ tsp jeera
½ tsp black pepper powder
oil / butter
salt to taste.

Method for stuffing

Heat oil in a pan and add the jeera and fry till they crackle.
Add the broccoli, green peas and salt cook for a minute.
Switch off the gas and add pepper powder mix well.
Cool completely, make small balls out of them and the stuffing is ready.

Method for Paratha

Divide the dough into small size balls, spread into round shape.
Flatten it, fill the stuffing and cover it.
Roll out in to round shape by dusting wheat flour.

Heat a tawa, place the prepared paratha on the hot tawa and cook on low flame.
Apply a tsp of oil flip it over and add another tsp of oil.
Cook well both sides.
Broccoli & Green Peas Paratha is ready to serve.
Enjoy these Parathas with curd / raitha.

Vegetable Paratha

Mix wheat flour, salt, oil, and water knead in to soft dough for parathas.

Ingredients for stuffing

1 Green & Red bell peppers (chopped)
2 tbsp grated carrot
2 tbsp grated cabbage
¼ tsp red chillie powder
¼ tsp masala powder
¼ tsp garlic paste
¼ tsp jeera
2 tbsp oil
Salt to taste

Method

In a pan add oil in that add jeera, red chillie powder, masala powder, ginger past and saute.
Add all vegetables, salt and saute for 2 minutes.
Switch off the gas and allow to cool.

Divide the dough into small size balls, spread into round shape.
Flatten it, fill the stuffing and cover it.
Roll out in to round shape by dusting wheat flour.

Heat a tawa, place the prepared paratha on the hot tawa and cook on low flame.
Apply a tsp of oil flip it over and add another tsp of oil.
Cook both sides well.
Vegetable Paratha is ready to serve.

Chapathi Egg Rolls

Ingredients

1 cup wheat flour
2 eggs
1 onion (finely chopped)
1 tsp grees peas
2 tsp carrots (finely chopped)
1 tsp tomatoes (finely chopped)
1 capsicum (finely chopped)
1 tbsp tomato ketchup
1/4  tsp red chillie powder
Grated cheese (optional)
salt to taste
oil

Method


In a bowl add wheat flour, salt and mix it with water and make a  soft dough.
Make chapathi, Cook both the sides sightly and keep aside.

Heat oil in a pan and add onion saute for a minute.
Add carrots, capsicum peas and saute for 2 minutes.
Finally add tomatoes, red chillie powder and salt,
mix it well, cook for a minute .
Transfer this vegetable mix in a plate.

Take two eggs and a pinch of salt in a bowl and beet it.

Heat pan, Pour the egg mixture on it and just spread it,
also add some oil.
Top it up with the above vegetable mix.
Add grated cheese, keep the chapati, slightly press and turn it to other side.
Transfer it to a plate and roll it.  Serve hot with sauce.
( you can also roll it in a  foil paper or butter paper )

Bottle Gourd paratha (Soraka)

Ingredients

1 cup grated bottle gourd
2 cups wheat flour
Oil as needed
Salt to taste.

Method

In bowl add grated bottle gourd, wheat flour, 1 tsp oil and salt.
Mix well sprinkle little water and make soft dough.
Divide the dough into small portions and make round balls.
Dust the balls with little flour and roll them like a chapathi.
Heat a tawa, place the prepared paratha on the hot tawa and cook.
Apply ¼ tsp of oil, flip it over and add another ¼ tsp of oil.
Cook both sides well.
Serve with curd or any pickle.

Health benefits

Bottle gourd is rich in minerals, iron, protein and fiber.
Fiber helps in preventing constipation and piles.

Spinach Phulka (Palak)

Ingredients

1 Bunch spinach leaves
2 cups wheat flour
1 Green chillie
1 tsp chopped ginger
1 tsp oil
1 tsp ghee / butter (optional)
A pinch sugar
Salt to taste

Method

In a bowl add water with a pinch of sugar and bring it to boil.
Dip spinach leaves in this water for 2 minutes.
Strain the water (keep this water to add in dough)
Dip the leaves again in ice water for 2 minutes.
Grind spinach, green chillie and ginger to a smooth paste.
Fliter the above paste,by adding water and set aside.
Add  wheat flour, salt, oil, above water and  mix well.
Knead into a soft dough let it rest for 10 minutes.

Divide the dough into small portions and make round balls.
Dust the balls with little flour and roll into thin phulkas.
Cook the phulkas on both sides slightly on tawa.
Then put on direct flame till it puffs.
Add little ghee or butter.
Serve hot with Curd / Raitha/ Pickle.

Paneer & Pudina Paratha

Ingredients

2 cups wheat flour
½ cup grated paneer
½ cup fresh curd
¼ cup gram flour
2 tbsp chopped pudina (mint)
1 tbsp oil (for dough)
¼ tsp Jeera
¼ tsp red chillie powder
A pinch turmeric powder
Salt to taste
Oil

Methode

Mix all the above ingredients by sprinkling little water and knead into soft dough.
Roll out into round shapes using little wheat flour for dusting.
Heat a tawa, place the prepared paratha on the hot tawa and cook on low flame.
Apply ½ tsp oil flip it over and add another ½ tsp of oil.
Cook both sides well in low flame.
Paneer & Pudina  Paratha  is ready to serve.
Enjoy these parathas with curd / any raitha.
