Thattai

Ingredients

2 cups rice flour
½ cup roasted gram flour
1 tsp red chilli powder
¼ tsp asafetida            

1 tbsp gram dhal (soaked in water for 15 minutes and filtered)
tsp butter            
Salt to taste.

Method

In a pan add rice flour, roasted gram flour, red chilli powder,
asafetida, curry leaves, soaked gram, butter and salt mix it well.
Add water little by little and mix all these ingredients to make dough.
Now make small round shape balls out of the dough.  
In plastic sheet spread oil, and keep this.  
Now close the plastic sheet, gently press with flatten vessel (coffee davara)
Heat  oil in a pan.
Slowly turn the plastic paper on your palm and it will come easily.
Now drop this into hot oil and deep fry it.                                                                           
The simple and the delicious thattai is ready to serve.
Variation - In dough you can add white sesame seeds and crushed peanuts also.

Bread Tikki

Preparation time 5 minutes
Cooking time 10 minutes.

Ingredients

Bread slices 10
5 tsp mayonnaise or butter
2 Finley chopped tomatoes
2 green chillies
1 spoon kalonji (onion seeds) or black sesame seed
For batter
1 cup gram flour or maida
1tabs idly batter (optional)
¼ tea spoon red chilli powder
4 spoons oil
Salt to taste

Method

Add idly batter and gram flour mix well with water.(like bajji batter consistency)
Now add red chilli powder & salt mix well.
Spread ½ spoon mayonnaise or butter in each bread.            
Heat tawa, dip the bread slice in the batter both sides and put on the tawa.
Now on the top add tomatoes & green chilli sprinkle a pinch of salt & few Kalonji or black sesame seed.
Now add a tsp of oil around, cook well, flip it over and add another tsp of oil and cook well both sides.
Ready to serve hot bread tikki.

Variation – You can top it with any of the following.
Onions, capsicum, corn, mushrooms, cheese, paneer & olives.

Vegetable Cutlet

Ingredients

4 or 5 potatoes (boiled, peeled and mashed)
1/2 beetroot boiled and mashed
small piece of ginger- finely chopped
2 spoons boiled corn or peas
1 chopped onion
¼  spoon red chilli powder
¼  masala powder
2 spoons corn flour
2 spoons roasted gram flour
oil to fry
salt to taste.

Method

In a bowl add mashed potatoes, beetroot and corn and mix well.  
In a pan add 1 spoon of oil in that add onion, ginger, red chilli powder& masala powder
sauté for 1 minute and add this to potato mix .
Now add salt, corn flour and roasted gram flour mix well all together.
Make small balls out of it, shape each portion into a cutlet.
Heat oil in a pan and put the cutlet on that
fry  both sides (shallow fry) on medium flame until golden brown.
Serve hot with ketchup or any chutney.
If the vegetable mix is sticky you can keep them in refrigerator for 10 minutes to set well.

Bread Rolls

Ingredients

8-9 Bread slices  
4 spoons grated carrot
4 spoons grated cabbage
2 spoons finely chopped capsicum and onion
2 spoons boiled green peas
¼ spoon red chilli and masala powder
4 spoons oil
2 spoons finely chopped coriander leaves
1 spoon corn flour mixed with 1 spoon water
Turmeric  powder – A pinch.
Salt to taste

Method

In a pan add 1 spoon of oil in that add onion sauté for 2 minutes.
Now add all the vegetables one by one then add turmeric powder, red chilli powde and salt.
Fry for 5 minutes and set aside.  Filling is ready.
Now cut the edges of bread and slightly press with chapatti roller. 
Add 2 spoons of vegetable filling and slowly close the bread with help of corn flour paste.
Toast the filled bread in a hot tawa with oil, in low flame. (shallow fry)
Bread rolls is ready serve hot with sauce.

Onion Pakoda

Ingredient

1 cup gram flour
1/2 cup rosted gram flour
3 onions (thin sliced)
1 Green chilli
1 spoon red chilli powder
Ginger (optional)
Oil for frying
Salt to taste

Method

Take bowl add gram flour and roasted gram flour in that add salt and red chilli powder mix well.
Now add onions, green chilli and curry leaves mix well and sprinkle very little water.


Heat oil and deep fry till it is golden brown.

Crisp Idlis

Ingredients

One Bowl cut idles.
2 spoons corn flour
¼ spoon chilli powder
Salt to taste

Method

Cut idls in to desire shape. Sprinkle 2 spoons of corn flour, red chilli powder and a pinch of salt.
Add 2 spoons of water mix well keep for 10 minutes.
In a pan pour oil and heat well.
Then deep fry the cut idlis till it is crisp.
You can do shallow fry also by using less oil in a tawa.

Ready to serve hot crisp idlis.

Bread Upma

Ingredients



Bread                                            Loaf  1
Onion                                             2
Capsicum                                        1
Lemon                                            1
Spring onion / coriander leaves         2 spoons
Sev                                                2 spoons to garnish
Salt to taste
Red Chilli Powder 1/4 spoon

Oil 2 spoons







Method


Cut bread into small pieces.
Keep a kadai, add 2 spoons of oil. Add onions and saute till light pink.
Add capcicum and saute for few minutes, with salt and chilli powder.
Then add bread , sprinkle few drops of water.
Turn off the gas after 5 minutes
Add spring onions / coriander leaves.
Garnish with Lemon Juice, Sev.




Variation II

Same method as above

Add 2 tomatoes to the ingredient and saute after onion.
Finally add 1 spoon of tomato ketchup and 1 spoon of butter / ghee.
Garnish with  coriander leaves.
