Beetroot rice



Ingredients

1 cup Raw rice ( or basmathi rice )
 1/2  cup grated beetroot
2 chopped onions
Few crushed ginger and garlic
2 tbsp green peas
1 Bay leaf
1/4 tsp red chillie powder
1/4 tsp masala powder
1 green chillie
Chopped coriander leaves few
2 tsp oil,1 tsp ghee ( optional)
Salt to taste


Method

In a cooker add oil, ghee, ginger,  garlic, green chillie, bay leaf and onions saute for 2 minutes.
Now add rice, salt masala powder mix well.
Add greated beetroot, green peas.
Add 2 cups of water.
Cover the cooker and cook for 2 whistles.
After 10 minutes open the cooker and
granish with coriander leaves.
Very simple beetroot rice is ready to serve.
Serve hot with any raitha.

I used normal rice only.
If you are using basmathi rice adjust water accordingly.

Mumbai Mast Tomato Pulao

Ingredients

2 cups rice
4 cups water
2 onions
4 tomatoes
1 small capsicum
2 tbsp green  peas(boiled)
1 tbsp tomato ketchup
Few coriander, mint leaves
Garam masala (2 Cloves, cinnamon, bay leaves, elaichi, fennel)
1 tbsp ghee
1 tbsp oil
1 tsp ginger, garlic paste
¼ tsp turmeric powder
¼ tsp red chillie powder
½ tsp Pavabaji masala powder
salt to taste

Method

Pressure cook rice with 4 cups of water and set aside.

Heat pan, add ghee and oil.
Add garam masala just fry, add ginger and garlic paste.
Add onions, capsicum and fry for few minutes.
Add finely chopped tomatoes and fry till it is cooked.
Add turmeric powder, red chillie powder, pav baji masala powder,
tomato ketchup, peas,  salt mix well and cook for five minutes.
Add mint and coriander leaves mix well.

Now combine this with cooked rice and mix gently.
Cover and cook it in a low flame for two minutes.
Ready to serve Mumbai Mast Tomato Pulao.
Serve hot with potato chips or any raitha.

Ellu Sadham (Sesame Rice)

Ingredients

1 cup cooked rice
2 tbsp black ellu (washed and filtered)
3 red chillies
1 tsp urad dhal
¼  tsp mustard
2 tbsp gingili oil
Few curry leaves
Salt to taste


Method

In a bowl add cooked rice, salt, gingili oil mix gently and set it aside.
Heat oil, add mustard, when it stars spluttering add urad dhal, red chilli and curry leaves.
Add this to above cooked rice.
Heat pan, add ellu and dry roast until it pops well and set aside.
(cook in low flame and keep stirring)
Dry roast urad dal , red chillie and allow to cool.
Grind urad dal and chilli coarsely, then add ellu and grind.  
Now add the above powder to the cooked rice and mix well.
Ellu Sadham is ready to serve.
You can pack this for lunch box also.

Tomato Rice

Ingredients

1 cup raw rice                       
4 Tomatoes                        
2 Onions                         
1 Green chilli                  
Few green Peas                             
1 tsp ginger
1 tsp garlic     
A pinch turmeric powder               
1 tsp red chilli powder             
1 tbsp ghee
2 tbsp oil
1 tsp fennel
1 tbsp chopped mint & coriander leaves
Salt to tast

Method

Pressure cook rice with 2 cups of water.
Heat ghee and oil in a pan add fennel, ginger and
garlic sauté for a minute.
Add green chillli and onion.
Fry till it turns light brown.
Add finely chopped tomatoes and fry till it is cooked.
Add turmeric powder, red chilli powder, peas and
salt mix well cook for five minutes and switch off the gas.
Now combine this with cooked rice and mix gently.
Garnish with freshly chopped mint & coriander leaves.
Simple tomato rice is ready to serve.
 Serve hot with onion raitha and potato chips.

Mint Rice (Pudina rice)

Ingredients

1 cup Basmati rice
2 cups water
1 bunch mint leaves
Small piece of ginger
2 tbsp coconut
1 green chilli
4 pods garlic
1 tsp fennel (saunf)
A pinch turmeric powder
1 tsp oil
2 tsp ghee
Salt to taste.

Method

In a pan add a tsp of oil in that add fennel,
ginger, garlic, green chilli and mint leaves fry for 2 minutes.
Now add coconut (don’t fry) to the above and grind to a fine paste.
In a pressure cooker add ghee, 2 cups of water and boil it.
Now add the above paste and turmeric powder mix well.
Finally add rice and salt mix well and cook for 2 whistle.
Simple mint rice is ready to serve with any raitha.
