Ingredients

1 cup greated carrots
1 big tomato
2 tbsp roasted peanuts
2 Red chillies
1 Green chilli
Few garlic crushed
Oli 
Mustard
Curry leaves
Salt to taste

Method

Heat oil in a pan.
Add garlic, red chillies and green chilli saute.
Add corrots, cook for 2 minutes.
Add tomato and salt cook for 2 more minutes.
Add roasted peanuts to the above and allow to cool completely.
Now blend every thing to a fine past.
Add mustard and curry leaves seasoning to the above.
Ready to serve our Carrot chutney.
Carrots are filled with beta-carotene and vitamin A and high in antioxidants and rich in fiber.
