Appam







Appam is very simple and common breakfast or dinner

 There are so many variations in the batter.

Method 1

Ingredients

2 cups raw rice
A pinch sugar
Salt to taste
oil for greasing 
1 Pack Eno or a pinch baking soda (optional) 
  
Method

 Soak raw rice for 3 hours.
Grind to a smooth paste.
Take one ladle of batter, add one glass of water and mix well.
Cook this like kanji (Porridge) and allow to cool.
Add this  and salt to the batter mix well, keep aside for 10 hours for fermentation.
Add sugar  and Eno or baking soda  just before preparing.

Heat a non stick pan, grease oil, pour the batter and spread clock wise slowly.
Close it with lid, cook in low flame.
Cook for 4 to 5 minutes, when the center part is cooked well and fluffy remove it from the pan.

Cook only one side. 
Ready to serve hot appam. 
Goes well with Vegetable stew / coconut milk / any Vegetable Kurma

Method 2

Regular dosa batter add baking powder or Eno before preparing appam.
Method and all same as above.

Method 3

2 cups raw rice 
2 tbsp poha
1 tbsp urad dhal
Baking soda a pinch
¼ tsp sugar
oil for greasing 
salt to taste

Soak rice, poha, urad dhal together for 3 hours and grind to a smooth paste.
Add baking soda a pinch before preparing appam.
Remaining  method same as above.

  
Method 4

Ingredients

2 cups raw rice 
½ Cup cooked rice 
¼ cup grated coconut
1 tsp Sugar 
½ tsp Yeast 
Salt to taste

 Soak the raw rice for 3 hours and then grind it along with cooked rice and coconut.

Mix the yeast, sugar, salt in lukewarm water and add this  to the batter.
Remaining method same as above.

Method 5

2 cups raw rice
2 bread slices (remove sides)
½ cup tender coconut
¼ cup cooked  rice
¼ tsp dry yeast
A pinch sugar
Oil for greasing the pan

Grind above all ingredients and mix well.
Add a little lukewarm water, sugar, salt and yeast and mix well.
set aside for 10 hours.
Reaming procedure same as above.

I tried all the above methods. I prefer method 1 & 2 
You can choose your own method.

Inserted of baking soda we can use Eno also.
If you don't want to use either you can avoid both.

Oats Upma

Ingredients

1 Cup Oats
2 cups water
1 chopped onion
3 tbsp chopped carrot
2 tbsp chopped capsicum
2 tbsp green peas
1 Green chillie
1 Red chillie
1 tsp chopped ginger
Few curry leaves
2 tbsp oil
¼ tsp mustard
¼ urad dhal
Salt to taste

Method

Dry roast oats for 2 miutes and set aside.
Heat oil in a pan, add mustard, when it starts spluttering,
add urad dhal, ginger, green chillie,red chillie and curry leaves.
Add onions saute for 2 minutes.
Add carrots and capsicum saute for 2 minutes.
Add water and allow to boil well.
Add salt and oats stir well, cook in low flame
until all water gets absorb.
Very simple Oats upma is ready.

Ladies finger fry

Ingredients

¼ kg Ladies finger 
2 onions
2 tbsp gram dhal
2 tbsp coconut
3 tbsp oil
A pinch turmeric powder
¼ tsp chillie powder
¼ tsp Jeera
Salt to taste

Method

Dry roast gram dhal till you get nice aroma and set aside.

Heat oil in a pan, add jeera and onion saute for a minute.
Add ladies finger, turmeric powder and cook for 5 minutes.
Add salt and red chillie powder cook until crisp.
Add coconut and cook for a minute.
Finally add gram dhal mix well.
Ready to serve Ladies finger fry.

Health benefits

Ladies finger is an excellent source of fiber,
which helps in controlling the cholesterol level.
It has  vitamin B 6 and folic acid.

Curry leaves powder

Ingredients

2 cups dry curry leaves
½ cup urad dhal
¼ cup gram dhal
2 tbsp roasted gram dhal
1 tsp black pepper (or 6 red chillies)
Salt to taste

Method

Dry roast curry leaves, urad dhal, chana dhal and pepper
separately till crisp.
Add salt to the above and grind to a fine powder.
Serve with hot rice and gingelly oil.

Health benefits

Curry leaves contain iron, calcium, vitamin C, and phosphorous.






Broccoli Soup

Ingredients

1 cup broccoli florets
1 Cup vegetables stock (boiled vegetable water)
1 tsp finely chopped garlic
1 bay leaf
A pinch cinnamon powder
1 clove
1 tsp butter
Few crushed pepper
½ tsp fresh cream
Salt to taste

Method

Heat the pan add butter.
Add bay leaf, garlic and clove saute.
Add broccoli and vegetable stock cook until broccoli boils well.
Add salt, cinnamon powder, pepper powder and switch off the gas.
Remove the bay leaf and garnish with fresh cream.
Ready to serve hot Broccoli Soup.

Pizza (Pan Pizza)

You can prepare this at home in a pan even without an oven.
It can be made within 10 minutes using a simple non-stick pan.

I am using ready made pizza base and bell peppers for topping.
Add toppings according to your preference.

Ingredients

2 Pizza bases
4 tbsp Tomato sauce
1 cup grated mozzarella cheese
2 tsp olive oil or any other cooking oil
1 Onion
Triple color bell peppers (each 1)
1 tsp oregano
¼ tsp chillie flakes
1 tsp butter
Few basil leaves
Salt to taste

Method

Heat the pan, add butter and olive oil.
Add chopped onion and bell peppers and saute for a minute.
Add red chillie flakes, oregano, basil, salt and saute.
Cook for a minute and keep in low flame.

Add few drops of olive oil in a pre-heated (2 minutes) non-stick pan.
Place pizza base on it, spread tomato sauce on the pizza base.
Over the sauce spread the hot vegetables.
Add grated cheese, cover the pan with a lid and cook.
Cook on very slow flame until all cheese melts.  ( 4-5 minutes)
Finally add olive oil on the pizza and serve hot.
Very interesting  and easy pizza is ready within 10 minutes

Other Vegetables used for pizza

Black & green olives, Paneer, onions, tomato
Sweet corn & baby corn and  mushroom.

Tips

You can add capsicum with seeds for nice aroma.
Your vegetable mix should be hot, then only cheese will melt quickly.
You can use cheese as much as you want.
