Mint rice / pudina sadam is very healthy and quick recipe, easy and delicious rice variety made with fresh mint leaves. We can prepare this with very minimal ingredients and ideal for lunch box.
Ingredients
1 Bowl cooked rice
1 Bunch mint leaves
4 tbsp. grated coconut
3-4 green chillies
Few ginger - garlic
2 tsp oil
1 tsp ghee
¼ tsp fennel
1 lemon
A pinch turmeric powder
Salt to taste
Method
Wash and clean mint.
In a pan heat oil, add green chilli, ginger & garlic saute.
Add mint leaves saute for a minute.
Add coconut to the above saute for few seconds and switch off the gas.
Allow to cool completely and blend to a smooth paste.
Heat oil, ghee in a pan add fennel, turmeric powder and the above paste saute for a minute and switch off the flame.
Add this to the cooked rice, add salt and mix gently.
Finally add lemon juice and mix well.
Ready to serve mint rice.
We can serve this with potato chips, potato fry or any raitha.
Ideal for lunch box.
Tips
We can add roasted cashew nuts also.
